This is one of my favorite recipes that i have ever came up with. I usually do it with Lamb hearts (3 or 4) or a beef heart (one large one).

The same recipe works perfectly the same with ground beef (lamb or venison)
**************************************

1 large heart (1 lbs) diced (1/2 inch cubes) - take the fat out
2 Large white onions (Sliced medium-to-thin slices 1/2 inch long slices)
5 medium sizes RIPED (juicy) tomato (i prefer vine tomatos) Shopped
1 teaspoon allspice
1/4 teaspoon basil
1 1/2 teaspoon oregano
1 teaspoon paprika
1/2 Lemon
Extra virgin olive oil (about 1/2 cup for both pans)
(You can add sliced mushrooms too, it's good with that too)

Salt and Pepper to your liking

You need TWO different sauce pans (frying pans). One large and one medium.

Pan 1 (larger pan):
(Medium heat)
Add 1/4 cup olive oil
Add sliced onions
Add Shopped Tomatos with their juice
Add spices
Add salt and pepper to your liking
Sautee' the mix till it starts making more juice and starts to see a little boil bubbles

Lower heat to LOW and cover and let it simmer (hmm, they smell good so far)

Pan 2:
(Medium heat)

Add 1/4 cup olive oil and let it heat a little (2-3 min)

Add diced hearts
Add some seasing (Salt, Pepper, and some of the seasoning from the recipe above)
Squeeze 1/2 Lemon (I prefer to fork-it to get the nice pulp in it too) over the hearts

Cook till ALMOST done (about 7 min on med heat) while you stir it occasionaly and cover it when you're not stirring it. etc..

Now, take the almost cooked heart (with the oil/juice) and poor it in the Veg mixed pan (Pan 1).

and stir... taste and add seasoning to your liking.

cook on low for about 10 min ~ 15 min till done.
