Had the first family gill fish fry of the year last night!
Dinner for seven with plenty left over. Four had Covid-already. ;)
Hope it gets cold soon so there will be more of these!
(Picture doesn't really do it justice- kids call it "Fish Candy"! :corkysm55)

Just missing the paper towel to take some grease out :).. Unless ya already did that ! Looks wonderful
Yeah! Lightly salt and roll in paper towel when out of the pan. Flash just made 'em look a little more shiny.
Also, @Bucman fried up 15 more gills after the picture is the reason for the left-overs. ;)

That looks like a fantastic gill dinner you made there. I haven't had a good fish dinner like that since I put my boat away two months ago. Kinda sorry that I did that now.

I have tried a million different recipes. For pan frying fresh panfish, pike or walleye I keep coming back to Drakes.

All I use is all purpose flour, mix in salt and pepper. Tap dry the fish with a paper towel to get rid of excess moisture, roll around in the flour and fry. I also use sesame oil instead.
Heavy batters give me a gut ache, so this works for me.

I use Drakes on pan fish, but don't care for it with walleye. For walters I use 1/2 flour and half Italian bread crumbs, deep fry or pan fry, and lightly salt and garlic. :corkysm55
