Are there any good deer processors in/around Troy-Rochester Hills-Auburn Hills area?

I've butchered my doe up into the cuts and burger/sausage but I have some meat left over that I'd like to make summer sausage and pepperoni sticks out of. I don't know how to do it and want to get it done pretty quickly.

Any suggestions?
