why do my cast irons come out like this when seasoning. Shouldn't it be an even coat?
This is lobster and steak done in cast on NYE. I use a new wave cook top which gets cast iron to 600. I can cook a steak as good inside on cast as on a grill.Might be a dumb question but what is the benefit of cooking with cast iron? I have one but use non stick pans mostly.

I like gas over electric. Some may laugh however, this nu wave cook top is amazing with cast, better than my gas stove on power burner.Cast iron is best on a flame and not electric burner. Consistent heat that doesn’t cycle like an electric burner does.
