Start with Russett potatos cut into fries (thick, thin, wedge or waffle)

SOAK potatos for 1-2 hours in ice water, drain, rinse and soak again in cold water for 1-2 hours more. drain and let them dry out a little (I keep mine in the fridge uncovered overnight)

In your fryer cook potatos for 2-3 minutes until they are just beginning to brown, remove, shake off excess oil an let cool on paper towel.

bag (ziplock) 1/2 cooked fries and place in freezer until frozen.

drop FROZEN fries into hot oil and cook 'til golder brown, salt with sea salt or kosher salt.:corkysm55

I always use the blended crisco oil, works great.
