Take a whole goose breast and cut it in half.
Slice open the breast like you are making a pocket in the breast.
Marinate in zesty Italian dressing overnight.
Fill the pocket with cream cheese and jalapeno peppers. Hot peppers are great as they cook some of the hotness goes into the meat.
Wrap the 1/2 breast in bacon, keep bacon on the breast with toothpicks.
Barbque until bacon is done. Do not overcook.
This was modified from little bite size chunks to a full breast and finally to a 1/2 breast for ease of cooking. My favorite recipe.
