Egg the fish. Coat with instant potato flakes. Fry. Salt to taste.

Add finely crushed corn flakes and soda crackers in equal parts to this mix.Deep fry and enjoy.

This is my favorite way to fry crappies:
Smash Ritz crackers into a powder in a plastic bag. Dip a fillet in a beaten egg, and cover it with the crackers. Then fry in peanut oil until golden brown.
