    Yep, same here. Love the Drake's. Alot of times I just shake fish around in gallon Ziploc with the Drake's and right to the fryer. It's a dry batter, a lighter. I add seasonings to the Drake's (garlic,old bay,Cajun, and sometimes lemon pepper). If I do a wet better, I just mix some of the Drake's separate in a beer batter, about like cake batter consistency. I still do dry coating instead of egg, then dip in wet batter. I use a deep cast iron, that I flick water of my fingers at. when it pops good, it's ready..lol..make sure to Pat fish dry first is key to all battering ;). Made some on Saturday also... and here's some perch gone dry a week ago..

    Looks great!

    The only issue with shake'n'bake Drake's is that it prematurely ruins the oil. Too many loose particles. I have found it best to press the fillets into the Drake's and shake off the loose stuff.

    I get about 4-5 sessions out of my oil.

    Grease 350-375. I usually lean towards 375 as it drops when fish goes in. Cant believe no one has mentioned zatarans breading from sams club. Purt near a 5 gal bucket of the stuff for 7 dollars. Perfect crunch evey time. 20180402_200449.jpg

    Just have to strain the oil, but I don't seem to have a problem with it breaking down any quicker. We'll do pounds of wall in a turkey fryer at outings that way, alot quicker to do alot of fish. Especially using those plastic shakers :). We did a bunch that way up at Houghton lake this winter, smelt, burbot, gills, and pike. Oh yeah, shook and fried slice potatoes too..lol.     try corn flake crumbs/flour 350 on the grease light and crispy everytime!!

    6CC533EE-BFE3-4E5D-8F9E-B04B131CB6BE.png A little more on my methods. I use a wash of egg & milk and put on a coating of dry Drake’s in baggy or batter bowl. I have used corn meal type and Drake’s as a “beer batter”. If you are going for a clean process the corn meal is the way to go. The family got me a batter bowl for coating the fish. Thing is a time saver for larger occasions if dry coating.

    Andy's red no egg wash. Make sure fillets are dry. Another key is not putting cold fillets in the fryer. This will lower the oil temp and you end up with oil soaked fish.
