The only reason beef and pork are sold at 6 months is the cost benefit of feeding them (lbs. of weight added per lbs. of food) diminishes. It has nothing whatsoever to do with tenderness and beef may be graded as "prime" up to the age of around 3.5.

Have you ever eaten an old squirrel and then a young squirrel? Rabbit? There is quite a difference.

If your prime beef comes off an intact breeding bull you are probably going to be a bit disappointed.

You’re not necessarily wrong, however one of the best eating deer I’ve had in the past was a 4.5 year old mule deer. It’s the only mule deer I’ve ever taken that was really good. One of the best parts, the deer was over 250 lbs dressed. Don’t prejudge those bruisers, it’s all about diet. I’m guessing that buck did more grazing than browsing. I’ve also never had a bad Michigan whitetail, they’ve all been good.

In my case I need 4-5 deer each year. Shooting 6 month olds doesn’t really do the trick. I’ve taken a few doe fawns in the past, they are good eating.

I have never eaten a bad deer but some are better than others.
