baby backs on the mes 40

    so far everything on the masterbuilt has been great...snacksticks,summersausage,spatchcock chicken, christmas turkey, jerky, ABT's, and now....baby back ribs. Used the common 3-2-1 method....mustard+rub. did not leave em overnite, but they were excellant.

    im no expert, but have doing a lot of reseach...
    1. do not trust the temp readout on the smoker, get a digital probe to determine the temp of the smoker at the cooking rack
    2. rub the ribs with yellow mustard and a good rub, put in fridge over nite
    3. pre heat smoker to 225....add the ribs and thin blue smoke for 2 hrs
    4. pull the ribs out and foil them...back in the smoker 2 more hours
    5.pull ribs, remove foil, back in smoker for 1 hr...or until done and sauce at this time if you like.
    this is 3-2-1 for spareribs.....babybacks can be cooked 2-2-1

    there are a lot of "pit masters" that can probably tweek this but its how i did it and they were great, and the meat pulled off the bone. u can also spray with apple juice and other concoctions...

    Since I just built this Hotpoint refrig smoker which is electric I tried your procedure with some pork steak. The end result, we could cut it with a fork and the taste :corkysm55:corkysm55:corkysm55

    Rat city...met you at Ludington [Fairview farms campg] last August. How was your fall? Fall fishing was bad but good deer seasons.

    Did real well last fall from shore on the Big Sable .In two outings our group brought home 30 kings.Also had my first White Fish outing in late November at the Muskegon pier and took home two. Will be up to Farmview next August if Mark invites me.Hope to see ya then.

    Search in this forum for "riva rub" (from the grillmaster himself)
    Excellent on anything I've done on the smoker or grill.

    Not sure if that what his post above is, all I can see is the dreaded "little red X"
