recipe for pickled deer heart??

    I got to sample some pickled deer heart a few years ago and enjoyed it a great deal. Does anyone have a recipe??

    I have some pickling in the frige right now.

    Took one deer heart, cut it into strips slightly larger than a french fry, and trimmed off any skin.

    Put the strips into a mixture of:

    1 cup white vinegar
    1 cup water
    1/4 cup seasoning salt

    Put the stuff in the frige and let it pickle. (it helps to stir the mixture each day.) The pickling sets the protein (similar effect to cooking). Thus, when there is no more red in the center of the strips, then it is done.

    Yesterday, the test strips were totally done and it was exceptionally tender.

    My next step is to make a cracker dip out of it (for tomorrow's dinner).

    Today I will put the strips into a blender. Add softened cream cheese. Blend and pour out to chill.

    Also did the same thing with some Lox. Very good, but a little salty.

    This is good for about 2 hearts:
    I cut the heart into pieces and then boil till done.
    Take it out and clean it up and let cool.

    I put the heart in a quart mason jar and then
    add vinegar, (apple cider vinegar and white vinegar)
    till about 3/4 full and then top it off with water.
    Put in a heaping table spoon of pickling spice and a
    couple table spoons of brown sugar. Put the lid on
    and make sure it is all well mixed and then put it in the
    frig. Adjust the recipe however you want, the longer it
    sits the more it pickles. About a week or so and it
    tastes good to me.

    Does anyone have a recipe for smoked deer hearts. I just got a Brinkmann All in One Smoker for Christmas. I have a ton of deer organs and I think that smoked deer heart would be excellant .

    Please let me know.
