View Full Version : Smoked Walleye, very tasty!!! (pics)

Caught these 4 nice walleye handling MC Sunday morning, just downriver from Lambton plant.

I cut off fins with wire cutters, cut off head, tail, gutted and washed.

Then cut each fish into appx. 4 peices.
Mix brine in plastic bucket, 1 gallon water, 2 3/4 cup Morton Coarse Kosher Salt, 1 3/4 cup lite brown sugar. Mix up brine and wait 5 minutes, them mix brine again making sure salt disolved. Put peices of walleye in brine, put something heavy on top to keep fish submerged, I use a glass plate. Put in fridge for 14 hours.
Take out and pat dry with paper towel and let sit at room temperature for 45min.


Put in smoker for 190 degrees for 3 hours 15 minutes using about 4 oz. of hickory wood. My smoker in electric with a temperature gauge. Here it is...

I know it is a simple brine recipe, but it is very good. :D

WOW !!!! Steve you are the master of good grocery caribou sticks in the winter and now smoked eyes :p sweet............... Thanks I was looking for something differant to do with eyes.

Iceguy great photos looks like good stuff. Did you use any of the other ingredients shown in the photo, like the rib rub ect?

No, the rib and chicken rubs were just on my counter.
I just eat em with some hunk extra sharp cheddar cheese and crackers. I plan on smoking a lot more and I will vacuum seal and freeze some to bring on the next Spuds and Suds outing :grouphug: this winter for all to try. And yes Ed I will bring some carribou hot sticks as well . tightlinesyall

Hey Ice Guy, did you fish the Marble Eye, or where you just fishing up there?
The St.clair River is full with nice fish right now, we beatem up pretty good this weekend. Nice job on the fish, but the only thing i like to smoke, is fish like Lake Salmon and Lakers that arent as good eatin as Walleye's and Perch.

Great Post, I have heard that you can smoke eye's but, had also heard that they would be dry. I like to smoke meat and salmon, now I will try smoking walleye

Great pics and great timing. I was just reading up on the smoker (elec.) my g-pa gave me. It is a little older but never used. I was thinking about breaking it in this weekend. That helped motivate me a little more. I think I will try a chicken or roast first. I have not been catching enough walleye to experiment on :bash: . Looks awesome though!!

Memories....Where is our Ice anyways? I can't wait to try some of the Walleye, I will be waiting very patiantly for this outing next winter. Nice catch

I know this sounds funny but......who the hell are ya? :confused:

There is a little fishing derby going on this Friday night. Dad and his buds, me and my buds, and relatives from Hubbard Lake will be here. Me, probably my brother and Dennis will be in my boat.

My dad just smoked 6 big walleyes yesterday along with one nice salmon he got a couple of weeks ago at Blue Water Bridge. He said they turned out great. seeya and tightlinesyall

A Big thanx to iceguy. I attempted some smoked walleye today and it turned out great. Smoked 4 trays with 4 sides each. I used the recipe listed but smoked with a mix of fresh apple and oak. The photo is after eating and giving sides to neighbors who smoke Salmon for me. Good stuff. I like every bit as much as smoked salmon. Thanx again Steve!!! Next I'll have to figure out how Ice guy steakes the eyes?

Steve made some Dip out of the smoked walleye that is excellent as well. He just stopped by my desk and I loaded a few crackers up.

I'll type the recipie cause Im nice:

1 lb Smoked fish ( cleaned and deboned)
1lb Cream Cheese
4 tbsp Sour Cream
2 tbsp Mayonaise
2 tsp Tabasco
2 Cloves garlic Minced
1/2 cup onion finely chopped
1tsp pepper
1/2 tsp Dill
2 pinch Paprika
Juice of 1 lemon ( optional )

Mix all ingredients, add smoked fish, Mix again and chill for at least 1 hour before eating

I was just looking around the internet when I came across that recipe and decided to make it with some smoked walleye that me & ICEGUY caught.

I didn't have a scale to measure the poundage so mine could have used more fish in the batch.

Also the smoked walleye we did were staked not fillet. They were harder to debone.

I liked ICEGUY's batch better. They were fillet and the dip was more smokey because more of the fish is exposed when smoking.
