Get some Zateran's (sp?) Jambelya mix. Parboil the rabbit meat. Strip the meat off the bone and sautee it in butter and your favorite cajun seasoning mix with some minced up onions and lemon juice. Once the meat is seared, make the mix as specified on the box and mix in the same skillet as you sauteed the meat.

This will warm you up well after a mid-winter rabbit hunt!
