View Full Version : Pheasant WHITE CHILI

You can use any type of bird for this. . .it is great for get togethers. . .it was the biggest hit at our NAVHDA potluck and I also made it for Parent Teacher conferences here at school.

48 oz. jar of Great Northern White Beans
1-11/2 lbs. of chicken/pheasant/grouse/chuckar/quail/dove/etc.
1 16 oz. jar of salsa (I use hot, but can use anything)
1 green pepper
1 large onion
2 jalapenos
2 8oz. cans of chicken broth (you can do one can and one can of water)
8 oz. shredded cheese
2 packets of McCormick's White Chili mix
1-2 tablespoons cumin


Cook bird of choice and shred the meat. Cut up onion and peppers and saute. Then just add everything together in a crock pot and you can change ingredients to your liking. . .add something different or more of something(sometimes I use another bag of cheese, take something out(jalapenos for example). Serve with tortilla chips. . .makes a great dip or just eat as chili.

Sounds great Randy. I have a bunch of pheasant left in my freezer and Jenni won't eat 'em, so I have it all to myself. :evil:

Thanks for the recipe. I made a crock full for the family cookout yesterday and it along with 2 large bags of tortilla chips didn`t last long. 1 bag of cheese in the pot and the wife used a second bag to sprinke on top after she put it in bowls. Set it out as a dip and they attacked it. Great stuff, easy to make. I had some pheasant from a hunt back in March so that is what I used.:)

Well it's about time this recipe made it on the forums!!! I know ffor a fact that this chili is great on tortilla chips!!
I know of two chubby guys that put the hurt on a pot of it, earlier this spring. :D

I always add a dollop of sour cream to the bottom of each bowl.

Made it last week with pheasant and it was excellent. A spoon full of sour cream and grated cheese on top is a nice add on. Might cut down on the japelanos, as it was alittle too spicey for some. Have more pheasant in the freezer and will make it again soon.
