I have whole pheasents in the fridge and wanted to know what ways you guys would recommend to prepare them. Thanks in advance.

For whole pheasants I'd say stuff them with a moist, buttery dressing and throw 'em in a roaster. Nothing like pheasant with dressing just make sure you keep them covered and baste them frequently or they may dry out on ya.

Quarter and breast out, dredge in flour, brown in pan with olive oil or butter, then make a sour cream and wine sauce with garlic and onions and cook slowly in a covered pan till meat falls off bones :D Or cut up in pieces dredge in flour and seasoning and brown in skillet and it is fajita time. Both are very good but it is hard to screw up a good pheasant.

The recipe I use used to be on the label of Old El Paso enchilada sauce. I just substituted pheasant with chicken. It helps those legs disappear.

Lightly smoked they are very good. Cold, just to snack on or on a sandwich. mmmmmmmmm
