I bought a smoked pheasant from a local butcher and it was great but it wasn't cheap (worth it for the special occasion.)
After it was pretty much devoured, I decided to use the bones and remaining meat for soup stock. I simmered it with leek, carrots, celery, and seasonings, then strained it, etc.
The stock turned out wonderful and will transform into complete soup tomorrow. We have a smoker and plan to smoke more poultry in the future and this makes leftovers sound much more enticing. :)
