This is the first time that I have to make the thanksgiving meal by myself. I'm not too shabby in the kitchen, but I really need a turkey stuffing recipe, hopefully something that isn't too complicated. If someone could help me out here, I'd really appreciate it.

Here's a fairly simple and popular recipe. You could double or triple it since this is for a smaller turkey. I've added apples before for a sweet flavor.
This may be used to stuff poultry or as an accompaniment to a poultry dish.
16 ounces mild or sage pork sausage
1/2 medium onion, finely chopped
2 ribs celery, thinly sliced
1/2 cup chopped parsley
Salt and pepper, to taste
1 (8 ounce) package herb stuffing mix
Over medium heat, fry together sausage, onion and celery until pork is browned and celery is tender. Stir in parsley. Salt and pepper to taste.
Prepare stuffing mix as directed. Blend together stuffing and sausage mixtures.
Yields 8 servings.

Never tried this one but it sounds like it would be good!
In some of it's Detroit area locations, the hamburger chain, White Castle has turkey stuffing recipe info that require using White Castle Hamburgers. Some grocery stores carry frozen White Castle Hamburgers in their freezer section, a stuffing recipe might be listed on the box. Anyways...just a thought. Good luck!

Walleye, sounds interesting. I had NEVER had a White Castle burger until about a year ago. Here's the recipe.
White Castle Hamburger Turkey Dressing
Source: St. Petersburg Times - 9/13/2000 - Stuffing was developed at White Castle's headquarters in Columbus, Ohio, in 1987
10 White Castle hamburgers (see note)
1 1/2 cups celery, diced
1 1/4 teaspoons ground thyme
1 1/2 teaspoons ground sage
3/4 teaspoon coarse ground black pepper
1/4 cup chicken broth
In a large mixing bowl, tear the White Castle hamburgers into pieces and add diced celery and seasonings.
Toss and add chicken broth. Toss well. Stuff cavity of turkey just before roasting.
Makes about 9 cups (enough for a 10- to 12-pound turkey). Allow 1 White Castle hamburger for each pound of turkey, which will be the equivalent of 3/4 cup of stuffing per pound.
NOTE: If hamburgers are bought in a White Castle restaurant, remove pickles. Mary Batters likes to sauté the celery before combining it with the rest of the ingredients.

my own recipe (everyone loves it I'm told)
1 12 ounce package any brand seasoned stuffing mix(thrift stores work fine)
1 big onion chopped
2 cloves garlic minced
2 ribs celery cut into half inch pieces
5 slices good rye or wheat bread cut in half inch cubes
1 teaspoon sage
1 half teaspoon rosemary
1 half teaspoon thyme
you can cook the onion,celery,garlic, till soft in a little oil to bring out their flavors ,but it is not necessary.just mix all ingredients in a very large bowl and add
1-2 cups water sprinkled on until mixture is softened but not soggy. will just clump in hands. add water slowly and gently mix
after bird is stuffed and extra is in bottom of roaster (spray with cooking spray first for easy cleanup) also put 1-2 sliced onion in bottom of pan for easy cleanup and soup stock the next day
sprinkle with 1 teaspoon paprika
remember to salt the bird with 1 tablespoon or less seasoned salt inside and out before stuffing
bake at 350 in covered enamal roaster( best) or foil pan for about 4 hours for a 12 pound bird.most people overcook and dry out the turkey.16 pound bird 5 hours pop up timers do work but dont open the oven too much.good luck.
