Bourbon Barbeque Rabbit
There are no exact measurements for this recipe so you adjust it for how many rabbits you are cooking. This is for about 4 rabbits.
In a pot (important later) on med/high heat melt a half stick of butter and sauté one onion chopped and four diced cloves of garlic.
Quarter up the rabbits and rinse them and dredge them in flour with some pepper added. Just quickly sear the rabbit on both sides and remove it from the pot for later.
In the pot add another chopped onion and 3 to 4 chopped carrots. You might need to add some more butter.
Add one pint of Bourbon to the pot and bring up to heat. When it starts to roll, light Bourbon with a match and let flame until alcohol is cooked out. Add a quart of plain BBQ sauce to pot and stir.
Add the rabbit back in and put covered pot into oven on 300° at least an hour. The sauce will reduce and the rabbit becomes very tender. This can be done in a roaster for large batches.
Serve over egg noodles.
