Are you talking about deep frying the whole goose or chunks of the breast?

I've taken a goose breast and cut it into 1" chunks, then marinated it in Olive oil and red wine vinegar, then rolled it in bread crumbs. Then dropped the breaded chunks in the fryer for a few minutes. It was excellent.

Never done a whole bird but it does sound good.
