View Full Version : Pheasant/Grouse Pasta Recipe

I was experimenting the other night with some fresh tomatoes, chicken and Penne pasta and came up with a pretty good recipe that could be used with grouse or pheasant breasts and any type of pasta.


Ingredients:

Sauce:
3 large tomato's
Chopped fresh garlic (this can be adjusted to your liking)
1/4 cup Approx. Olive Oil
1 Packet of Alfredo Sauce Mix

Grouse/Pheasant/Chicken Breast
4 Breasts
Italian Seasoning
Chopped Fresh Garlic
Olive Oil

Cooked Penne Pasta (Amount depending on how "soupy" you want the dish to be.)


1. Add tomato's, garlic and olive oil to large sauce pan and bring to a simmer for about 15 minutes.
2. Prepare the Alfredo Sauce mix as directed on the pakage, add to tomato mixture.
3. Quickly sear the seasoned breasts in hot Olive oil and then place in the oven for 20 minutes on 350 degrees.
4. Slice the breasts into thin strips
5. Mix Penne Pasta with tomato/alfredo mixture and meat in a large bowl.
6. Top with Parmasan cheese and Italian herbs

Serve with Garlic bread and a Ceasar Salad.

I think that Morel Mushrooms, or any kind of mushrooms would be good in this sauce as well.

Morels work in just about anything, lol.

A mix of fresh crimini and shitake would be a good choice too. I would slice and saute them with the garlic for a few minutes before adding the tomatoes.

Another suggestion would be to cook the pasta al dente (aka almost done), then add to the mix and allow the whole thing to simmer for a few minutes. Your sauce will be thicker, assuming you want this, and the penne will soak up some of the flavors.

The cool thing about penne is that it has ridges which catch thicker sauces. Some of us obsess over these things. :lol:
