Ok, I made this recipe many times. I made it myself and believe me it is good! You can use catfish, whitefish, and many other fish that can be breaded. Catfish is best because of the cajun taste and will cook easiest. This can be prepared to your own spicyiness and the Creamy Dill sauce will be great to level the spicyiness.
What you need:
Batter:
Flour
1/4 cup dill weed
1 tsp. of seasoning salt
1/2 tsp. Black pepper/Red Pepper
1 tbl. parsley
Fish fillets(Catfish is best)
1/4 cup. butter
Dill Sauce:
2/3 cup. sour cream
1/4 cup. whole or 2% milk
2 Tbl. lemon juice or 1 Tbl. lime juice
1 tsp. lemon pepper
1/2 cup. dill weed
1/3 cup chives or parsley (optional)
Directions: Mix batter and lay filets in the batter mixture, be sure to cover both sides of the fillets thouroghly. Put aside. Turn stove on to med-high and melt butter in the pan. Now, you want to make the Dill sacue. Mix the milk and sour cream thouroghly and slowly while mixing add the lemon or lime juice. Continue mixing and add all seasonings. Now, put filets in pan and cook until golden brown. Serve with the creamy dill sauce. Makes a great meal with mixed veggies or redskin potatoes.
