According to the Mayo Clinic (mayoclinic.com for any who want to go there) "Studies have shown that marinating meats prior to grilling reduces cancer-causing substances called heterocyclic amines (HCAs). These are caused when muscle meats (red meat, chicken and fish) are cooked over high heat..."

Farther down in the article it states that "Marinates also have antioxidant ingredients, various vitamins and other health-enhancing phytochemicals that have been associated with potential protection from heart disease and cell and tissue damage."

So it looks like, in addition to helping to tenderize meat (the acids in the marinades break down some of the muscle fibers) and adding new flavors, the process of marinating game meat also has other healthy benefits.

So here's a marinade to try:

1/3 cup lemon juice,
1/4 cup honey,
2 TBSP Olive Oil
1/4 tsp nutmeg
1/8 tsp red pepper.

This is normally used on pork but also works well on grilled carrots, sweet bell peppers, and apple halves.

Give it a try.
