Here goes....my way :)

First take some side cutters, and cut thos spines off at the bases.

Next I simply make a cut behind the gill plate, you'll notice where the meat starts is kinda far back compared to a walleye.
The I make a cut down the back.
When you get to the point on the back past the anus you cut all the way thru and continue out to the tail.
Now go back to the rib area and fillet like any other fish.

Then with the skin still on, take a very very very sharp, did I say sharp?...
Knife and lay the fillet on a very flat hard surface.
Remove the skin as you would any other fish BUT remember the catfish skin is thin so don't angle the blade down toward the hard surface or you'll cut through the skin.
