Turtle Stew,
For this recipe you will need:
2 lbs turtle meat, trimmed and cut into 1" cubes
4 cups seeded chopped tomatoes (fresh)
4 1/4 cups water
1 cup chopped onions
1/2 tsp salt
1/2 tsp thyme
1/4 tsp pepper
1/4 tsp cloves
1/4 tsp nutmeg
1 tsp lemon juice
2 TBSP flour
1/4 Cup dry cooking wine
1/2 cup snipped celantro.
Procedures.
In a Dutch Oven, combine turtle meat, tomatoes, 4 cups of water, onions, salt, thyme, pepper, nutmeg, cloves, and lemon juice.
Bring to a boil.
Reduce heat and simmer, uncovered, for 2 1/2 hours or until meat is tender (stirring occasionally.
In a small bowl, combine the remaining 1/4 cup of water, wine, and flour. Blend until smooth.
Add to stew, stirring constantly until mixture thickens.
Garnish with celantro and serve.
