Squirrel Stew (also works for rabbit)
For this recipe you will need:
4 squirrels, cut into serving pieces
2 TBSP Canola oil (or other cooking oil)
1 medium onion, chopped
2 cloves of fresh garlic, minced
1 Cup red cooking wine
4 1/4 cups Soup stock
2 1/2 TBSP Cornstarch
7 carrots, peeled and sliced
5 stalks celery, sliced
5 potatoes, cubed
1/8 tsp paprika
1/8 tsp pepper
Procedure:
Using a medium heat, Put oil in a Dutch Oven, then brown squirrel for 2 or 3 minutes
Add oinon, garlic, paprika, pepper. Keep stiring to prevent burning of the onion.
When onion is carmalized add the wine and heat thoroughly
Add stock.
Cover and simmer for 1 hour or until the meat is tender.
Add carrots, celery and potatoes and cook another 30 minutes.
dUsing 1 1/4 cups of stock from the Dutch Oven, stir in the Corn starch until evenly mixed and smooth.
Add to Dutch Oven and cook until stew thickens (3 to 5 minutes.)
Serve and enjoy.
