View Full Version : BBQ Goose Sandwich

Filet your goose breast out put both halves in the crockpot with 2cups of water on low for 8 hours. Remove goose breasts, shread the meat with a fork, place back in the crock pot after draining all the water and pour a bottle of your favorite bbq sauce in, heat up and serve on a hamburger bun. Its not rocket science but it sure tastes good

To shorten the first part of this I use a pressure cooker (20-30 min at 10psi) instead of the slow cooker. Then shread the meat into the slow cooker.

Also, don't waste those legs and thighs. They make great BBQ sandwiches!

Another "Thumbs Up" for this recipe. I did a batch last fall for a Notre Dame game and it was VERY well received by all...even after I told some it was goose ;) .

Anyone ever do anything similar w/ deer? I have a plethora of steaks left and a roast or two-would like to do something easy with a bunch of it again for a Notre Dame game this year...Any suggestions are apreciated!

I've done BBQ beef in a slow cooker by just adding the bbq sauce at the beginning, I'm sure well trimmed venison would work fine. I kind of like the idea of cooking and then pouring off the water b/c when you add the sauce at the beginning it can be a little watery.

i do this, only replace the water with some beer (honey brown works well)
and slit each breast and shove some jalepeno in there.

i like taking it to office parties, no one ever figures out what it is and they're always amazed when i tell them .... or when they find some steel shot :o

This one is JustDucky's recipe, copied from an old post. in a word, AWESOME.

Here's my duck BBQ sandwich recipe that I've posted once or twice before. I make this in North Dakota because we usually have a ton of ducks to eat, and it's so easy (crock pot). The guys kill for it each year.

makes 8 good sized sandwiches - adjust for more
2 celery stalks
1/2 cup chopped onion
1/4 cup chopped green pepper
1/3 cup butter
1/2 cup ketchup
1/4 cup brown sugar
3 tbsp. Worcestershire sauce
1 1/2 teasp. chili powder
1 teasp. salt
1/8 teasp. Franks Red Hot Sauce
4 duck breasts, or assorted pieces

in a bowl, combine ketchup, brown sugar, Worcestershire, chili powder, salt & pepper, & Franks sauce. Put celery, onion, green pepper, & butter in the crock pot. Add duck pieces on top. Pour the mixture that you made in the bowl over the top. Cover & cook 8-9 hours on low until duck shreds easily with a fork. Shred the meat all up, and mix the entire mess up thoroughly. Serve on buns. If you want it even better, add some homemade cole slaw on the bun with the BBQ duck....MMMMMMMM!

This is sooooo easy, especially when you're out hunting all day. We've found that we can put this all in the crock pot on low, head out the door at 6am, come home at dark, mix this all up and eat. I know it says above only 8-9 hours on low, but you can leave it all day and it doesn't dry out at all....seriously. Trust me, you can feed this to the in-laws that detest wild game and they'll never know the difference.

how about grinding it and making meat balls..... i ground up 2 hind quarters huntnut gave me before he moved to alaska. i took the ground venison and added a couple of eggs and some bread crumbs. very good meatballs. i have spaghetti water boiling right now.

the bbq goose sounds great.
