Zugbug,
The main thing to keep in mind when cooking over a campfire is that you need to keep a supply of coals in-the-making. Coals are what you cook over (similar to cooking on a grill only you make the coals as you go.) In my outdoor kitchen area, I have a fire circle where I keep a fire going, and a "key hole" cooking area on one side where I rake coals from the fire.
The main way to control the temperature of the cooking area is in the amount of coals and also how high the food is above the coals.
Here's a recipe that works well for stream-fresh (or in the backyard) trout:
Keep the fire going so that you have an ongoing supply of coals and rake enough coals aside to give a medium fire on a grill.
Then, for this recipe you will need:
2 whole trout (drawn) approximately 1/2 lb each.
1 small onion cut into 6ths.
2 tsp butter
1/4 tsp salt
1/4 tsp pepper.
Procedure:
Cut two 18 X 14 inch sheets of heavy-duty foil.
Place the trout in the center of each sheet.
Sprinkle the body cavity of each fish with salt and pepper.
Stuff body cavity of each fish with onion pieces.
Brush butter on the skin - put reamining butter inside the body cavity.
Wrap the fish tightly in the foil, sealing the ends.
Place packets of fish directly on cooking grate and cook for 4 to 6 minutes.
Turn over and cook an additional 4 to 6 minutes.
Serve and enjoy.
If you know how to identify the plants, fresh Sorrel leaves can be used to wrap around the fish and add flavor.
Good luck with your campfire cooking

Tried this recipe 2 years ago while fishing the Norfork River in Arkansas. I would highly reccomend this for those of you whose significant other or children wont go near trout.
Take a trout and stuff it with red, orange, green peppers, onions, 2 fresh lemon wedges and sprinkle with fresh garlic. wrap the trout in approximately 4 or 5 strips of uncooked bacon. wrap in tinfoil and cook on grill or campfire until the bacon strips are done. splash some fresh lemon on the fish immediately when removing from the heat and enjoy!

The Browns and Steelies are showing up in the Joe. Here's a good way to cook them in camp or the back yard.
