I know there is a lot of fish frying going on latley and was wondering what some of the favorite batters are. I have tried a bunch and have mixed my own up a few times but w/ perch and walleye Drakes is still my first choice. I used a new one last night called Whistle Stop and it is pretty good. Cornmeal and flour mixed w/ some creole seasonings is good on any that might be a little gamey.

Drakes is good...but my all time favorite is McCormick's Golden Dipt Cajun coating. excellent on panfish

Fryer Magic is pretty darn good wrapped around a gill fillet:)

Drakes 99% of the time for me....have experimented with flower, crackers, corn meal, corn flakes...none as good as Drakes for me.

Not to brag, but I am a darn good cook. But one thing I have yet to master is keeping that darn batter on the fish or onions for that matter, so I stick to breac crumbs and or flour.

if I'm doing a batter, I either make my own with some flour, corn meal, baking soda, eggs, and water... then put in some pepper, parmesan cheese, and cayenne pepper. Or I just use drakes and put in some parmesan and cayenne.

If i'm doing a breading, I crack up some saltine crackers, then add you guessed it parmesan, pepper, cayenne, and some cajun seasoning..... YUM.

I make my own. Flour,1/2 as much corn meal(yellow) salt and pepper to taste,hot oil. Old southern Georgian reciept. I need some more gill fillets. Dave

Forgot to add.. 1/2 beer 1/2 water or milk when using Drakes. Getting very hungry now!!!!

I only use frying magic and everyone I cook for says its the best fish they have had.

Drakes for me. Use it dry. Mix a combination of eggs and beer, place your fillets in the mix,lightly drain and than dump your fillets
in to a bag of drakes with your own seasonings and shake. If your batter or breading is blowing off check your oil temp. It usually is to hot. For breading-plain ole' saltine crackers. Dam- now I'm hungry!!! Dream Catcher

I prefer my fish rolled in flour and pepper and deep fried. Same goes for walleye, gills, pike, perch, whatever. I've only had a very few battered fish that were as good.

Sometimes I mix cajun seasoning in my flour for my cajun gill fillets.


The only fish I actually batter is salmon strips and I use Uncle Joshs fish batter and I use beer as the liquid ingredient.

Dip the fillets in egg and then bread with Ritz crackers that have been ground up in a food processor, fry in hot Peanut Oil until crispy. Quite Tasty!

I bought some stuff at meijer that is a dry mix and I believe it is made by Andy's. It comes in an orange bag seems to have a pretty good taste. The instructions say to dip the fish in water and then in the batter, but I prefer beer. It usually only takes about 10 ounces to dip the fish in. But for some reason I always go through a 12 pack when I am making fish. I guess they soak up quite a bit. :eek:

I have had many people tell me that my batter is the best the ever had.( but i am to modest to admit it ). 1 cup of Gold Medal Wondra Flour (blue box), 1 tsp. salt 1 tsp. pepper 1 tsp accent add garlic if you like. Mix together while adding warm beer ( bud lite), make it a little thinner than pancake batter. Then deep fry! I use warm beer so I do not drink while I'm frying. Anyone trying let me know if you like it.:)

Kentucky Kernel witha touch of garlic powder. Seems none of the commercial batters have enough garlic to my tasting.

Jiffy corn muffin mix makes a good breading just dip fillets in milk then roll them in the dry muffin mix and fry.

I use Fryin' Magic with extra pepper for Bluegills,but after reading the other post's I think...........

I just give the fillets an egg wash and coat them with a mixture of flour, kosher salt, fresh ground black pepper, cayenne pepper, and whatever other seasonings are in the cupboard that look like they might be tasty. Sometimes the best mix just comes from playing around with different stuff.

Drakes and Budweiser gets my vote, but then again it has been what I was fed my whole life. Damn no wonder I drink so much.

I usually use a beaten egg and then plain saltines. But I have a large container of fish fri batter called "zatarians" I got from Sam's. It's very good like drakes but a little spicy.

Cajun seasonings, Cheese, Garlic, Eggs, Beer, etc. etc. etc. Dang, can you still taste the fish ?, or just a wad of seasonings masking the fish flavor ? Just a little salt and pepper with a light coating of Drakes and I'm good to go !

I agree Whale. For deep fry I use beer, flour and a little fresh ground black pepper. I like a thin batter at 325 deg. Nice and crispy ! I use the same batter for onion rings. Put rings in plastic bag and add Franks hot sauce, let them sit for a while and shake in another bag with a little flour before dipping in batter. Gotta go eat !

I like Drakes and Shore Lunch Mix (?). You can get this at Gander Mountain. Very good, especially the cajun, YUM. But other than that, I wil stick to drakes!!

First get some saltine crackers from save-a lot and either put them in a blender to crush or use a roller and crush to fine powder. Put them in a gallon plastic bag and add what ever seasoning you like to the crumbs. Next mix some pancake flour so that it is thin. Dip fillets in pancake flour to moisten, drop in bag of crumbs and shake.

Instant mashed potato flakes. Seasoned to taste. Light, crunchy and golden brown. Doesn't overwhelm the flavor of the fish. Egg wash if you like, not needed.

I can't take credit for it cause someone else posted it and I just happened to try it,,,, crushed up Cheezits in the food processor. Dipped 'em in egg and then in the cheezit crumbs, fried in a shallow pan with butter and olive oil. Its pretty amazing, if you like to " experiment", try that one. Yesterday, I had some perch for lunch, I used the Shore Lunch, Cajun. My dad uses Fryin' Magic, no complaints on either of those.

The first time I used it frying up a batch of perch & gills I and was greeted with empty plates and the look of baby birds faster than I could fry them up! I usually pan fry with peanut oil, gives them a nice taste. A little stronger but still good is frying with "Land-O-Lakes" whipped butter/marg. with olive oil! Heard about it but could never find it til lately. "VG's", a Spartan store in Waterford, right by the airport. :)

Frying magic was tops for several years. Then the wife started on the health kick and says we stop buying it. MSG in that stuff!! Switched to Drakes and it works real well. Add some additional pepper, or cajun, if you feel like it.

Hey if you get tired of all that frying, try this:

CHIPPER PERCH

dip fillets in Italian salad dressing and lay in a casserole
cover with crushed potatoe chips
cover that with shredded cheddar cheese
bake at 450 degrees for 20 minutes

equal amounts of Italian bread crumbs and parmesean cheese mixed in ziploc, then add fillets, shake up and lay on buttered(REAL BUTTER) sheet pan and place in oven at 400 for 20 to 30 min. depending on size of fish fillets. MMMMM


Try perch or panfish fillets with no batter. Just put fillets on hard plate, and sprinkle with salt pepper and parmesean cheese. Then drizzle some butter(REAL BUTTER) over fillets, cover tight with saran wrap and microwave for 5 min. Whala, no mess no fuss, just a fork and an appetite and one plate to wash. ;)

I should have started this post in the spring. I am not the greatest ice fisherman and hardly squeak out enough for me and the wife to fry up on the weekends. Lots of great ideas. COME ON WALLEYE!!!!!

Its hard to find sometimes but Zatarain's Fish Fri is excellent. They have two kinds that ive seen. The original and crispy southern. GOOD STUFF!!!!:D Its all I use.
