View Full Version : Pheasant/General game Breading alternative

I have a bunch of pheasants in the freezer. I was going to take a few and make a big batch of "pheasant nuggets" or "Pheasant Strips" to take to work with me for lunch for a few days.
I have been trying to dodge carbs where it is easy to do so. the breading on a "pheasant nugget" constitutes its only carbohydrates.
Chris, or any others, do you have any lower-carbohydrate alternatives to the typical breading? Like some sort of vegatable and spices mash that would give that spicy crispyness that helps out a plain piece of meat.

The mixture that I have liked the most is a combo of soy flour, Lawry's vegetable & Pork rub, and a few dashes of Gates Hot n Spicy. Not any strict measurements here, just an eyeballed combo.

Amos, here is another great low carb recipe that we love. It mocks a crepe, pancake, or burrito wrap.;) At least it has a bread texture, lol.

Blend:

1 cup cottage cheese
6 eggs
3 T soy flour
3 T melted butter
1 t salt

Pour into desired sizes and cook in oil.

Amos or anyone, if you have any favorite low carb recipes, I'd love to try them.
