Here's one I am serving up for family and friends tonite:

Breast out ducks or geese and debone
thin slice (3/8") the meat and cut into medallions
make 1 quart 50% water/vinegar solution in a glass mixing bowl
add 1 quart strong citrus juice (grapefruit, or orange are our favorites)
cover with plastic wrap and marinate several hours in the fridge
fry bacon till crisp, remove bacon and crumble
add onion,shrooms and whetever else you like to hot bacon grease then add the medallions.
cook about a minute on each side,maybe less.
salt and pepper to taste

serve with wild rice, red potatoes and your best batch of home brew.

take it easy on the vinegar ma
