Did this up at deer camp. Breast out the bird. Take bacon and wrap the breast and use tooth picks to hold it in place. Drop it on the grill and proceed to burn the bacon a bit cooking till medium. Remember it will continue to cook after you remove it from the heat. Serve in the bacon and just peal the burned bacon off and eat the rest.

I did a goose malard and one buffy this way. The buffy was my fav tasted great.

I also melted butter on the malard and goose the night before and coated them and let them stand overnight but I dont think it was needed.

Great idea. Everything tastes better when wrapped in bacon.:)

I do this also to most of the birds i shoot. I just shot my 1 goose over labor day and the breast are a whole lot bigger then ducks so becareful u don't dry out the meat.. a good i dea is to cut up the goose into bite size bites and wrap the bacon around the bite with the toothpic..

Don't burn the bacon and remove it....cook over lower heat and eat the whole shabangbang. also you can roll up a hunk of bell pepper, jalapeno, or other peppers in it. Tastes great!
