View Full Version : Cooked a goose tonight. BLAH !! needs some advice.

Hey guys I have been stir frying the goose and its been great. Tonight we did the breast in a crock pot. It turned out very dry. We cooked it on low heat for around 8 hours. It was in cream of chicken soup and was about 1/3 covered with the liquid. Did it need to be totally covered?
What did I do wrong?

I did a breasted goose that was unbelievable. One large onion sliced. A whole bunch of mushrooms sliced or cubed. Garlic to taste!:D Two cans of Campbells Golden Mushroom Soup. I sautéed the the onion and shrooms in a pan with olive oil untill they cooked down. (Onions transparent) Thru in the Garlic and brought them all together. Sliced the Goose breast into 1/4 slices and placed them into the crock pot. Poured all the rest of the ingredients on top. about 6 ounces of water into the fry pan to deglaze it added in a little chicken bullion for flavor. This joined the pot with all the rest. Stir on occasion. I served mine over egg noodles.

When you serve this up take all you want the first time! Seconds will be hard to come by! :eek: :p

I have a good jerky recipe that I use on anything from pheasant to goose. E mail me if you would like to try it.

I also love stir fry goose , its probally my favorite goose except for smoked goose which is more of a munchie than a meal. If you want to try slow cooking a goose give this a try :

Skin goose completely and I recomend parting the bird into breasts and legs/thighs to aid in fitting into slow cooker.

Mix up one or two envelopes of Lipton onion soup mix (powder) enough to completely cover the entire contents of slow cooker.

Add potatoes , carrots , celery , or whatever veggies you like but chunk them up into pieces rather than add whole to aid in cooking fully.

season with a little salt , pepper and whatever other seasonings you like
and cook as before ... low heat for 8 hours

I am sure that you will be pleased with the results and one thing the bird will not be is DRY. The leftover stock also makes for an excellent gravy when thickened with flour . Give it a try and let me know what you think

I found that treating goose like vensen verses fowl works a whole lot better. I tried chicken and turkey recipes and they taisted awful ie: marmilaid, honey, maple syrup... I hunt a lot of goose and do not believe in shooting what you can not eat and all my relatives and friends said "we've had enough goose"! I came up with this one which always gets brought to deer camp for the rifle opener: Goose Strogenoff ala crockpot. 1 - 2 goose breast(s) sliced in 1" pieces against the grain. Salt, pepper, and season slices with Lawry's Course Ground Garlic Salt with Parsley (a must have and quite cheap at walmart in the spice section). Chop browned slices into eatble sizes and put in crock pot. Cover with 2 onions chopped and sliced, 2 cans of chicken broth, lots of fresh or canned mushrooms, pepper, garlic powder and basil to taiste, and 2-3 tablespoons of worcestershire sause. Cook on low for 6 hours or so till onions are tender and remove from heat. In a pinch if not done, finish at a slow boil on the stove. Remove from heat and add 1-2 cups sour cream and serve on wide noodles.

try covering it in beer and green peppers for 6-8hrs. after that remove all the liquid, shred the breasts w/ a fork. put back in crock pot and cover w/ sweet baby rays original BBQ sauce. Add some water to thin out the sauce and let simmer for another hour or 2.

I thin slice my goose breasts and marinate them in BBQ sauce. I marinate them in the refridge for 4 to 6 days. Then I just cook them for 45 minutes on low heat in a covered pan.

Come out tender and it covers up the nasty goose taste.

This method came out of a lodge in South Dakota where they kill a mess of geese. They had to find a way to eat up all the geese that were shot by the hunters staying there.

best way ive made it so far is marinate goose breast over night in italian dressing and garlic salt then put em on the grill. the best:D

My best recipe is to shoot the goose and even though I know I hit it, turn to your buddy and congradulate him on a nice shot and let him take it. No need to worry about trying to make them taste edible. :D

Tried numerous ways and techniques, but the only one i can tolerate it now is Jerky....And Goose is better than ducks.....Just cant see killing an animal if i dont eat it......Anybody want to buys some decoys?????

Sprinkle Tenderizer, Salt, Pepper and 1/2 tsp of Rosemary to meat
Cover with Chicken Broth (Goose and other birds) (Beef broth for Venison)
Add about 4 cloves of Garlic
Add 2 Bay Leaves and 1/2 tsp of Oregano

Cook over night in crockpot or longer


I usually don't care for goose but this is the absolute best.

Another decent recipe is to rap Goose brest in bacon, cook on the grille until bacon is nice and crispy, take off grille, eat the bacon and throw away the goose Brest.....;) :yikes:

I make them all into summer sausage and snack stick's. You would be amazed how fast a couple hundred pounds disapear's. Really easy to make too!

take boned goose breast an d slice cross grain 1/2 inch slices .put in crock pot and add 2 tablespoons of brown suger then cover with apple cider. cook 8 hours ,drain ,put back in crock pot and stir with wooden spoon till meat pulls apart. add favorite b-b-q sauce let it heat back up and serve on bun.
taste like the best beef b-b-q you ever had

If it's a young goose (smaller size, sharper tipped wing feathers) it's hard to beat breasting them out, slicing the meat into 1" strips, sprinkling with salt and pepper and throwing them on the grill untill they are rare to medium rare(just like you'd cook a steak). Makes a great finger food, or you can serve it up for a meal with potatoes or rice of your liking.

Older geese with tougher meat get saved up for gumbo or sausage.

save the beer for drinking while the goose is cookin..
try apple cider instaed with the same reciepe..awesome:)

I was in Wyandotte recently to watch a high school rowing competition on the Detroit River. From a nearby golf course, a mother goose was walking her newly hatched brood of baby geese to the water forthe very forst time. You could tell that the chicks couldn't have been more than one hour old, if that.

Well, down the embankment they went and were about 3 feet into the river when a flock of seagulls swooped in and gobbled each and every one of those newly hatched geese babies up! I said to myself watching this act of nature playing itself out, "well at least somebody likes goose!

Breast out goose. cut breast into1.5-2 inch cubes. Rap in bacon season and toothpick. Cook on the grill til slighly pink in the middle. Eat like that or barbeque sauce when they are almost ready to come off.:xzicon_sm We call um Goose Titties. Take the legs and thighs and put them in the crock pot with whetever you like.Yum Yum.

Guys,

goose is delicious....just treat it like you wuold beef. This weekend we took some goose breast, cut it up into kabob sized chunks, placed hunks of bell pepper with it and wrapped it all up in bacon, threw it on some skewers and grilled it untill med-rare....My girlfriend and my sister in law who both though they'd hate it, ate more than my brother and me. This is simple, quick, and tasty!
