Makes 1 Pie
one 10-inch pie shell, unbaked
1 tablespoon butter, melted
2 plus cups pumpkin, cooked
3/4 cup dark brown sugar
1/2 teaspoon salt
1 to 2 teaspoons cinnamon
1 to 2 teaspoons ground ginger
1/4 to 1/2 teaspoon nutmeg
1/4 teaspoon cloves (optional)
1/4 teaspoon allspice (optional)
2 ounces dark molasses (optional)
1 cup milk, scaled
1 small can (5 ounces) evaporated milk
3 eggs, beaten
Brush the pie shell with melted butter then refrigerate.
Cook the pumpkin, brown sugar, salt, spices, and molasses in a saucepan over moderate heat until thick, about 5 to 7 minutes. Stir in the two kinds of milk and the eggs, and cook over low heat for another 5 minutes. Pour into a pie shell, and bake for 15 minutes at 425 degrees F, and then at 350 degrees F for 45 minutes.

Thanks for the recipe but I am actually trying to find out how to get the filling out of a grown pumkin from the garden. When I figure that out I will try your recipe

I did that once. I can't remember much except it seemd to take a LOOOOONG time for the pumpkin to cook down. Good luck, let us know how it turns out.

Hi Lookin, I usually bake my pumpkin after I cut it in half and scoop out the seeds. BTW, keep those and bake later after washing. Tasty treat.
Anyway, bake the pumpkin in the oven at 350 for well over an hour. I cover mine so it doesn't get burnt. Be sure to buy the ones that are "pie pumpkin" or they will be stringy. You can fix that with a food processor if you didn't get that type of pumpkin. Good luck and the extra pumpkin freezes well in a freezer box. Atleast 6mos in the deep freeze.
