Heres an easy one except for dressing out the turtle.
Soack turtle parts in salt water over night.
Debone and cut into nugget size pieces
Season lightly but dont over season
Dip in drakes and beer and deep fry to golden brown
Enjoy:D Cant believe how tender it was:cool:

What is the purpose of soaking the meat in salt water? I would think that would make it tougher, but I have never worked with turtle.

I have deep fried alligator and the meat wasn't too tough, but we soaked it in milk for some time prior to cooking.

I'm assuming you used common snapper?

Its good and the best part of fresh turtle meat is watching it wiggle in the microwave. Deboning is a treat too, theyll fight you to the end with (no head, blood or organs left )with whatever limb they have left! Turtle nerves are amazing!!!

as a kid i used to get a kick out of watching the meat move in the bowl. it was amazing that hours later it would still move. now that i think of it, i have a package of turtle in the freezer. i just might have to cook it up this weekend.

i soak rabbit,squirrel,duck,turtle, and goose in salt water overnight before cooking. as far as making it tougher i have never had a problem with that

Have always used it on salmon to remove the blood and tried it on the turtle.Have heard of using milk but havent tried it yet.Dad always used salt.

from what i have been told, soaking the meat in milk is supposed to remove some of the gamey taste from the meat. i use salt to draw out the blood also.

Ah eating snapper. If find that if you leave the snapper in a 50 gal. drum for a week it kind of purges the turtle. It will smell, but I have had it both ways and like them left alive in a drum for a weekor so.

As for cooking a little smoked turtle is great stuff. Snapper soup if good to. It's those moving nerves that make it taste so good.

Oh man oh man oh man oh man! Got to lunkers lounging in the garage right now. The've been flushing out since Monday. Need one more for a shindig. I'm goona do the nuggets and a batch of soup to go with it. We parboil batter and fry. I got a Cajun recipy for the soup. I've eaten alot of turtle, but I haven't had soup since I was four years old.

Turtles! you can critisize the way they look, the way they smell, and how hard they are to clean. But I haven't ever feed anybody turtle that didn't come back for more. Oh man oh man oh man oh man!

Tomorrows goona be work though. Wack, crack, slash, and stack

Got to do some turtle at least once every couple of years.
