kc masterpiece barbecue sauce
Cut walleye into 1 inch chunks.
Wrap bacon around walleye chunks and pin thru both pieces with a toothpick.
Put them in a raised tray in the broiler so juice from bacon drips away from fish.
Broil approx 15 minutes then turn over.
Broil approx. another 15 minutes putting on the sauce the
last ten minutes.
WWW bacon stands for walleye wrapped with bacon.

OMG that sounds good. Hey SS, haven't posted for a bit--been busier than usual.
When I was in Mexico recently we found that they wrap absolutely everything in bacon. It was hard to come home strictly for that fact! Man that stuff was excellent.
I am printing this recipe out--my in-laws will love it.

Welcome back. I wondered where you were. The recipe posted above was copied and pasted here during the reorganization of the old Recipe Book. There were quite a few recipe's in that format with no name on them - had to just move them with "Author Unknown" on the end.
The wraped-in-bacon idea works well with roasts and even on the grill. When cooking over a campfire - bacon is the way to have an ongoing baisting that keeps food from drying out (and also adds aa lot of flavor.)
I hope you took good notes on how the food was prepared in Mexico so you can share some real Mexican recipes with us. (My experience has been that - around here - much of what is passed off as Mexican cooking is not.)

Just made it yesterday....but I also add on either side of the toothpick a chunk of pineapple!!:corkysm55 :corkysm55 :corkysm55 It sure doesn't last long!!!

Try putting a piece of cheddar cheese in the walleye then wrap the bacon around it. Al
Going to have to try the cheese thing AL D.I love cheese and put it on everything I eat...Have to give it a try here soon!!!
you guys are makin me hungry, wonder how the bacon and cheese would go with trout?

Al, when you wrap the bacon do you wrap it (round) around the chunks leaving fish showing or do you totally encase/cover the fish? Also, on the cheese do you cut the chunk of walleye and insert cheese then wrap with bacon or ???
Pics of the finished product would be nice! Its lunch time and this is getting me hungry! :D

Yes, I slit the walleye chunk and stuff a piece of cheese inside then wrap the bacon (1/2 slice) around the piece of seasoned fish and insert a toothpick to hold it together, leaving 2 sides of the fish exposed. Also works great with chunks of marinated venison too:corkysm55. Al :chillin:

If you want something really good-try the walleye straight up-no pollution. You will be surprised.
With all the pollution one might as well use hotdogs.

I use this recipe for the larger walleye I catch, 5+ lbers. and up. Don't knock it till you try it............. Al :chillin:

I hvae made them in the oven too, put on a cookie sheet at 400 degrees. Al :chillin:

Tried a variation tonight with steelhead.
1" chunks, wrapped in bacon on kabobs with onion, tomatoes, and zucchini squash. Drizzle some EVOO, little garlic salt and pepper.
10 minutes on the grill.
It was the whip.

I have done the bacon wrapped fish for years and it is great. Another really good bacon fish recipe is to take some nice thick bluegill fillets and spread on a cookie sheet, sprinkle with granulated garlic then chopped onion and then some thin sliced bacon chopped into small pieces. Broil until the bacon is done. the cookie sheet keeps the fish moist while the bacon cooks. This also works well with crappie and most likely other fish.

Salmon has been my fish choice to wrap with bacon over the years...Everything goes good with bacon:D
Never tried putting cheese in it, thanks for the idea.....

Salmon has been my fish choice to wrap with bacon over the years...
When I was looking into the history of this recipe I was able to find a guy who said the earliest reference he found was a TV show which used bacon to wrap pieces of Salmon.
This was done as a way to cook pieces of those huge oily tasting Salmon that people were catching back in the early to mid 1970s. He then adopted the recipe to use for large Walleye.
