Walley Cheeks

After you finish your normal routine of cleaning your fish I like to cut the cheeks out. Just put your knife in and rotate. Plain and simple. the preperation is easy and there really isn't any effort involved.

The best way to eat them I think is to :

1) raw(very tasty)
2) Fried in butter with a bit of season salt

I think that many fisherman would be surprised by the excellent flavor.

Give it a try and myabe you will come up with an idea how to cook them yourself.

Here I thought I was the only person in the world who loved fish cheeks. I work as a Meat Manager and save all the cheeks from the salmon sold from the seafood department. I prepare them with beer batter, Drakes substituting the water with beer, and they are the best eating part of the fish. Cheeks have a different texture, more like shellfish but the flavor cannot be beat!

Oh-Yea! The cheeks are a real delicacy, and are missed by most fisherman. In fact I've been known to ask others at the cleaning station if they were throwing them away. Get some pretty weird looks sometimes.;)

We do eat the Cheeks on any larger fish that we catch: excellent flavor.

However, I can not take any credit for that posting. About two months ago, we had one "Wild Game Food Preparation" forum and a "Recipe Book." The recipe book was not well used and could not be searched by procedure, ingredients, or any other criteria. Thus, the original forum was divided into the current sub-forums, with the original as a place for general postings relavant to wild game cooking. Then, all of the recipe's from the book were copied over to the current sub-forums so that they are searchable, can be discussed, and also rated. However, many of the recipe's did not list an author so, as I moved them, I noted "Author Unknown."

There are still many posts from the past year that are good game-cooking and game care ideas. As I have time, they will be moved into the current sub-forums. Any suggestions as to which ones to put where will be much appreciated.

Oh my, i love them to. Anyone ever try it on salmon. I never can do it right.

They are good, but not the delicacy that Walleye Cheeks are. We just cut them out and lightly fried them in a very hot skillet (the idea being that the outside quickly browns while the inside is still somewhat rare.)

I've been doing it forever its great, on both walleye,salomon,pike and any other fish with a large cheek.

R A W? I love to eat cheeks too, but I can wait til they hit the pan.
