Does anyone make their own ground beef such as sirloin or chuck? Saw a short bit on Food Network but didnt see the whole thing. I saw them put chunks and whip them around but is there fat added? I assume you would buy a sirloin roast and a chuck roast, slice them into cubes, the toss into a food processor. Thanks for the imput!

I have done it using beef, but mostly game meat like venison.

A different recipe called for adding an oz of beef kidney, but I am not that brave.

BTW harbor freight tools carries cheap and good quality meat grinders.

i have never made beef burger because i try and only use venison burger. if your worried about the meat having enough moisture so it does not dry out you can also use mushrooms instead of fat.just graind the mushrooms and mix with ground meat and regrind together.start with 25% weight of mushrooms and fry it up and see how it is. still dry add more shrooms. this also keeps the fat content down.
