I have been cooking my "game chili" since yesterday, low and slow. The meat ingredients consist of: yesterdays goose harvest:), squirrel, ferrel pigeon, and shredded venison. Do others use something other than "the usual" ground venison in their chili? Has anyone used ferrel pigeons? To me, they are just bigger mourning doves, till they are in season! I also used many peppers, onions and hrbs from my garden. I cant imagine buying chili ever again!!! Of course, there is no "recipe" so to speak, I just add this or that as I see fit. Do people REALLY use an actual RECIPE for chili?:) With the weather getting colder, chili just hits the spot!!

Not me. I just go by what I have and what I know.

This happened by accident:
I was making the last venison roast from my deer one year. I was going to make just a standard roast with potatos carrots etc. i started the meat in the pressure cooker and realized that the potatos that i had were in really bad shape and i was fresh out of carrots so i decided to make the venison by itself in water, beer and dry onion soup mix.....then came the revalation......i had plenty of beans and spices. once the meat was partially cooked(starting to break apart easily, but still juicy) i shreaded the meat and made the best two gallon batch of chili that i have ever made.
I then made a 15"x15" pan of cornbread (using sweetened condenced milk because i ran out of Vitamin D*<-- this makes wonderful cornbread) and carved out the middle leaving about a half inch of cornbread around the sides and bottom. i filled the crust with some of the chili, covered the top with Fritos and shreaded cheese. Voila, "Chili-Frito Pie"
