Anyone know how to prepare Freshwater Drum(sheepshead)for fried or baked fish recipes?I tried deep-frying it and it tasted like****.When I go to Lake Erie that is the only thing I catch most of the time.Any good recipes would be greatly appreciated.

Burbotman,

I have never tried cooking a Drum. However, if it tasted bad when cooked in your usual fish-cooking manner, then you might try smoked fish out of it.

(Normally, I would not cook Carp on the grill, but they make an excellent smoked fish. The curing and smoking process totally changes the flavor. My preference for a fish species to smoke is White Suckers - the early spring run.)

I will check out some recipe sources and see if anything is listed.

Try filleting them and skin. Cut in 1in. chuncks and boil till done. Dip them in shrimp cocktail sauce and eat.

Yes some very strong cocktail sauce will do the trick.

If your gonna try smoking them, try filleting them first. I smoked one this past summer, it was still alive when I beheaded him and then gutted him,,,, left the rest intact, bones, scales and tail, and it was terrible!!!!!!!!! Maybe fillets will work though,,,,, let me know, I'm cuirous if it does.....

Fillet and skin. Place on an oak plank, salt and pepper to taste, bake, on the plank, at 350 degrees for 45 minutes, throw away the fillets and eat the board.

The sad part is the board would probably taste better.
