View Full Version : Need a Squash canning recipe!!!!!

Since we moved, I cant find my canning book and am to cheap to go buy another one when I know mine is probably still in storage..... Anybody (Tangleknot) have a recipe for canning squash????? Got a good deal on dumpling squash (wifes favorite) and I wanted to put up about 2 dozen pints for her, any help would be appreciated!!!!!!

Hi Mike,

I missed this post till today. Here's what is in one of my canning books.

Wash, cut in manageable chunks, pare, and remove seeds. Then cut in 1 inch cubes. Cover with water and boil 2 minutes. Drain, reserving hot liquid, and pack hot.

Fill jars with hot cubes, leaving 1/2 inch of headroom. (optional 1/2 tsp of salt to pints, 1 teaspons salt to quarts.) Add boiling cooking water, leaving 1/2 headroom and adjust lids.

Pressure cook at 10 pds

Pints: 55 minutes
Quarts: 90 minutes.

It says to cube only since heat transfer fails in foods of this type if processed strained. I have frozen cooked, mashed, squash before and it turned out great.

I love sweet potatoe squash. I think I am going to try canning some not that you've perked my interest. First, I am going to make a huge vat of apple butter.

IFN, do you have a squeezo? I just got one a year ago and I love it.

Dont feel bad Sarah, I just saw your reply now...... Yes I have a squeezo, got it at a garage sale for 2 bucks!!!:D I use it all the time!!!! Thanks for the recipe, I have sweet potatoe and apple dumplin squash to can, the wife has been on a squash eating binge lately and she wants me to do some hubbard also!!!!:rolleyes:

$2!!!!!!!!!!! Now that is a bargain! I have been shopping for a pumpkin screen for mine and those alone are over $25. Looks like I need to look a little closer at the garage sales. Good find.:D
