I'm going camping soon(and fishing) on Portage Lake near Houghton and just bought a new dutch oven. I seasoned it already and plan to do a venison stew in it to eat after a long day of fishing.

What I want to know is has anyone or if they have, deepfried over a camp fire? Also, how to deal with a big pot of oil so close to an open flame. I am hoping for a couple fish meals while we are there so one should be deep fried.

My thoughts were to build up the coals, set the oven on, and rake coals back and forth as needed for heat. Is this a good plan?

get a "splatter shield" at a kitchen specialty shop. Looks like a round window screen with a handle. This'll keep the ashes out of the DO and keep the splattering grease out of the fire. Or, make one out of a coathanger and tin foil.

Also, bank the coals on more one side so you can regulate the cooking by moving the fish in/out of the hot spot. This is MUCH easier than trying to find that exact time when the coals are best for frying over. Easier to move fish than coals. Moving coals stirs up ash. IMO.

An easier and safer way is to use about 2" of oil in a fry pan or your dutch oven and flip the fish over. Save oil to start fire next day.:D
