I hope to take a few bushy tails this week. I want to make a stew/soup out them when I get them. After preparing the stew (crockpot of water with squirrel and veggies) how do I make the water thicken up so it is more gravy like?

If you are using butter in your stew you could try using a brown roux:http://www.michigan-sportsman.com/forum/showthread.php?threadid=48430
Or you could use a slurry. For slurry, take a couple ounces of cornstarch mixed with twice as much water, Bring the stew to almost a boil and mix in the slurry. Continue stirring until it boils then remove from heat. It will continue to thicken while standing.
cornstach will only disolve in COLD water.
Don't know how many times I gotta remind the cooks in camp not to use hot water ! LOL

instead of water in the crock pot try Campbells GOLDEN mushroom soup. Can't go wrong making any stew using this as a base.

i just got some bunnies yesterday and im gonna make up some stew tomorrow in a crock pot. I have never used the crock pot. ive probably got 1-1.5lbs of meat and along with veggies. how much water should i use? :confused: also ypsi or anyone i assume the roux should be made first and added when you start the pot, rather than after it done. is that right? a thicker stew sounds good. what kind of spices will go good in stew?

Soak the tree rats overnight in water and about 1/4 to 1/2 cup vinegar.Cook in a crock all day with a can or two of cream of mushroom soup, water,onions and fresh mushrooms. Serve over wild rice or the white stuff.YUMMY!!!!
