I am looking for a new way to cook pike in like a canjun type manner. Got any idea's salmonsomker?

This is not so much a Cajun recipe as it is a spicy Mexican recipe - and the results are excellent - if you like spicy. (I found that some people loved it and some did not.)
For this recipe you will need:
1 Whole Pike (2 to 3 lbs) scaled
1/2 tsp salt
1/2 tsp pepper
1/4 cup lemon juice
1/2 cup beer
1 1/2 cups hot cunky salsa (Medium salsa if you don't like "hot".
Procedure:
Start the grill and set it for low direct heat.
Cut 2 sheets of 18-inch heavy-duty foil about 8 inches longer than the fish.
Sprinkle fish inside and out with salt and pepper.
Place fish on 1 sheet of foil.
Fold ends and sides of foil up slightly around the fish to form a "container".
Stuff the body cavity with salsa and pin shut with toothpicks.
Mix lemon juice and beer, then pour over the fish and fill the container.
Fold the sides of the foil together to seal.
Place packet on second sheet of foil. Wrap and twist ends shut to seal.
Place packet on cooking grate.
Grill covered for 15 minutes.
Turn packet over and grill covered for an additional 15 minutes.
Serve and enjoy.

Hey thanks salmonsmoker, I love spicey foods! The only thing now is I don't have enough pike that means I gotta go catch some more!!!!
