Venison Omlet in a Dutch Oven

One morning at deer-camp, I made up a batch of this omlet for breakfast. It stared an instant tradition.

For this recipe you will need the following:

1 Lb ground venison made into breakfast sausage
4 Cups bread torn into 1/2 inch cubes
2 Cups milk
4 Tbsp Butter
8 eggs, beaten
1 Cup grated cheese (I used smoked colby)
1 tsp seasoned salt
1/2 tsp dill seed.

Procedures:

Combine (mixing bowl) bread cubes and milk: let soak.

Melt butter in Dutch Oven.

Brown meat in the melted butter.

Add eggs, cheese, salt, bread cubes mixture, and stir.

Cover Dutch Oven and bake (cook) for 20 to 30 minutes (until the eggs are done) over a LOW heat (campfire, camp stove, regular stove top or regualr oven all work so long as you do not have too much heat.) After 15 minutes, check to insure that the bottom is not burning.

Place omlet on serving plates and sprinkle with dill seeds.

Served hot, this is an excellent start to a long day in the woods.

In our deer camp, I fed 8 people a hearty breakfast with this simple omlet served with coffee. There were no leftovers.
