Venison Stroganoff (mmmm mmmm good)

1 Clove garlic, minced
1 Med. onion, finely diced
7 TBSP butter
1/2 lb sliced mushrooms
dash of salt and pepper
1 1/2 to 2 lbs venison
1 C. beef gravy
1 C. sour cream
Paprika to taste
6 C. cooked extra wide egg noodles

Cut meat across the grain in 3x1/2 inch strips. Set aside.

Saute garlic and onion in 3 tablespoons butter.

Add mushrooms and cook 3 to 5 min.

Remove from pan.

Wipe out pan with a paper towel add
remaining butter.

After dredging meat in flour, saute in pan over
medium heat.

Add all ingredients and cook until tender.

Serve over cooked egg noodles.
