Can I carry a bow or a gun out of a case when on a bike (mountain). Does the gun have to be unloaded?

As long as the bike is not motorized a gun doesn't have to be unloaded or in a case. I hope you would think of safety being most important, yours and others.

Interesting. If I recall, a person can carry a sidearm in a holster and walk down the street and be legal. But as soon as the person steps into a car he is considered carrying concealed, even if he were to put the holster on the dashboard in plain site. Are you saying this be the same on a motorcyle? And a bicycle would be ok?

Last time I checked a motorcycle is motorized. I'm sure he was not talking about city streets. No doubt in my mind he was talking about two-tracks and out in the woods in the area where he hunts. It is the same for horses too.
324.40104(4) "Vehicle" means every device in, upon, or by which any person or property is or may be transported, except devices exclusively moved by human power.
324.40111(2)..., a person shall not transport or have in possession a firearm in or upon a vehicle, unless the firearm is unloaded in both barrel and magazine and enclosed in a case, carried in the trunk of a vehicle, or unloaded in a motorized boat.

It's perfectly ok with me that you have to have a CCW to carry while riding a motorcycle. I just find it interesting about the concealed part since it wouldn't really be concealed while riding a motorcycle.
