We have been eating a lot of garden soup recently. We use almost anything available from our garden and a few things from the grocery store.

zucchini, yellow summer squash, peppers, onions, & cucumbers from the garden and carrots, celery, broccoli from the store.
Whatever else you have available.
We have an older blender that we fill about 1/2 full with water and add as many vegetables that it will handle. Add 2-4 bouillon cubes and blend so that it comes out chunky. Repeat with the rest of the veggies.
We add shredded cheese or cream cheese for flavor & body while cooking. A few times over the years we have added chunks of turkey,chicken or cooked hamburger.

Very filling, not many calories.

We used to do it every year. We had a huge cast iron kettle and would invite half of the small town we live in to it. We called it garden stew and threw venison and all the vegggies into it.

I see I left out the tomatoes. Green tomatoes will give it a bit of "woodys" flavor just like fried green tomatoes. I'll also mention that you might not want to have this before an important meeting or appointment. Two bowls of this soup & you'll be sitting in the bathroom within the hour. Some flatulence to follow.
