This is a good one!!!!!:D Had it tonight for dinner, and everybody loved it!!!!!
1/2 pound sliced mushrooms
1 and 1/2 sticks butter
2 tbsp cajun spice
1 pheasant cut in strips
1/4 cup green onion tops, minced
3 tablespoons fresh parsley, minced
3 garlic cloves, minced
2 cups chicken stock
16 ounces pasta-dry-1 box (I used Fettuchini)
Cook pasta, set aside.
Mash 1/3 of the butter and combine with the cajun seasonings and pheasant. Heat larger pot (I used a big cast iron dutch oven) till hot and add pheasant,,,, Brown lightly..... add mushrooms for about 2 minutes. Then add green onions, parsley, garlic and stock, cook for about 2 minutes or until sause is at a rolling boil......
Add remaing butter in pats stirring to blend, cook for about 3 more minutes, stirring constantly.
Add pasta to coat,,,,, serve at once!!!!!
FANTASTIC!!!!!!!! Should work well with chicken or grouse as well!!!!
