Mark,
After taking off the breast meat, I put the rest of the Turkey into a big pot (pressure cooker is OK too, it shortens the cooking time) and cook it till the meat falls off the bones and the bones fall apart. After it cools, I pick out the bones and grissle, and use the remainder for soup stock and boned Turkey meat.

Thanks SalmonSmoker. Saw a recipe for turkey leg soup one time but don't know where I put it.
I low boil them for about an hour and then sort out all the little bones and tendons. After it's pieced out I mix with some cream of mushroom soup, celery, mushrooms and cooked egg noodles (cooked in turkey broth from legs), top with crushed croutons and bake till top is golden brown.

My wife slow cooks the legs and picks off the meat after it cools. Then she chops it into chunks, mixes it with frozen veggies, diced potatoes, turkey gravy and puts it all into those little pot pie tins with pastry crust on top and bottom. Bake till crust is brown.
I dont know how good that sounds to you, but trust me its goooood!
So good, I have even considered doing the entire breast that way!
