I am usally the camp cook for our big trout opener camping trip my buddies and I go on every year. This year I want to really wow my buddies with some kick ass grub!! What is a easy meal, I could cook over the fire, grill, or colmen stove that would really knock there socks off? Im open to suggestions. I dont have a Dutch Oven so I may be limited allready! We dont eat much fish! Beef, Pork, or Chicken entrees we perfer.

Whole tenderloin wrapped in bacon on the grill low to med low flame. Use you favorite spices and carve at the table. Great presentation and easy to cook. Just give it a little turn when you sear the bottom.

Riverboy,

Try chicken breast filets - they come frozen in a 3lb bag at Meijers. Thaw the night before, then, the next morning, put them in a ziplock bag with equal parts of grape jelly and water - marinate all day in a cooler. When you are ready to cook, get some coals going from the campfire, place a cooking grate over the coals and do it. Watch them closely as the sugar from the jelly will easily blacken but gives them an excellent flavor - they are best when not overcooked. For a side dish, get some Portabella Mushrooms, slice them about 3/4 inch thick, brush with butter or olive oil, and cook over the fire. Excellent flavor.

We always have a pot of chili going, and just like at the coney island we keep add'in to it as it get used.

Another favorate is grilled kielbasa and/or italian sausage w/sauted onions, green pepper and mushrooms. We eat it off the plate w/garlic bread, dont even bother with the buns anymore!

Grilled "Hot Wings" - Rub wings with veg/corn oil and "mrs. dash" mixture and grill. When there about half done I start moving them away from the heat and start basting on the "Frank's Red Hot Wing Sauce" rolling them as they dry. Several turns (5-6) with pleanty of coats of sauce and they're ready to go!

Whole Pork Loin (grilled) - I get the whole loins when on sale. Cut it in half (two rolls), marinate in italian dressing and cracked pepper mixture for six to eight hours (works good if you do it in a baggie and take in the cooler). Grill (roll) directly over the coals until browned all around then move all the coals to the center, move the loins off to the sides and cook with "indirect heat" for about 1.5 to 2 hours (meat thermo @350) or is "white" all the way the way through. Indirect heat cooking on a grille rocks!

Here is a tasty one. You will need the following:

hamburger
head of cabbage
pepper
seasoning salt
green beans
sliced potatoes
sweet onion
aluminum foil

ripe off a 18 inch or so peice of foil. Then peel off 2 leaves off of the head of cabbage and lay it in the foil. Now make a hamburger patty and put it on top of the cabbage. Season it to taste with the pepper and seasoning salt. Put some diced onions on top too. Next add some green beans and sliced potatoes on top of that. I use about a half of can of beans and potatoes per pack. Now put two more leaves of cabbage on top of the whole thing. Wrap it all up in the foil. so that it is completely covered. Throw each one of these foil packs right on the hot red coals of your burned down camp fire. 15 mins on each side. The cabbage keeps everything from burning and adds great flavor to the whole thing. Once you have one of these you will be making them at home on the grill. If you do. You don't have to flip them. enjoy!

Shish kebabs are yummy and you can make up a ton to take and just throw on the grill. I go with steak and chicken marinaded in Teriyake, crushed garlic, fresh ground pepper and brown sugar. Marinade overnight, then build the shish kebabs with the meat, onion, green pepper, red pepper and mushrooms. Yummy.
